Nicolas Rossignol was born in 1974 and represents the 5 generation of vine growers on the terroirs of Volnay. After a technical training acquired at the Viticultural High School of Beaune between 1989 and 1994, he put into practice his knowledge acquired during various internships like the Domaine JOSEPH VOILLOT in Volnay or the Domaine du VIEUX TELEGRAPHE in Chateauneuf du Pape, and began vinification on the family estate ROSSIGNOL JEANNIARD.
Anxious to master other techniques of cultivation and breeding, he went to win in South Africa Domaine BOSCHENDAL in 1995 and Bordeaux in Château LA CARDONNE governed by Château LAFITE ROTHSCHILD. It was not long before he created his own estate in 1997 with a surface of 3 Hectares distributed in the communes of VOLNAY, POMMARD, BEAUNE, ALOXE CORTON and PERNAND VERGELESSES, while continuing the vinification and marketing of the wines of Domaine Familial ROSSIGNOL JEANNIARD
In 1998, it is 1Ha 50 extra with applellations like Pommard 1er vintage Jarolières and Chanlins Volnay 1er vintage Fremiets and Santenots that come to enlarge the field. From 2005 a new town is entering the range Savigny-les-Beaune with a village and two 1er raw whose Savigny 1er Cru Lavières et Fourneaux and a Beaune 1er Cru Clos du Roy.
It was also at this time that the decision was made to create a business to unify the two domains at the commercial level, this is how all the wines are now marketed under the label NICOLAS ROSSIGNOL
The Domain NICOLAS ROSSIGNOL currently operates 6 ha 25 which gives a total area of exploitation areas of nearly 16 ha.
COTEAUX DU LYONNAIS ALIGOTE AGAMY 2022
Born from ancient lands, the vineyard of the Cave des Coteaux du Lyonnais extends over 230 Ha of vines planted with Gamay, for the reds and rosés, and with Chardonnay and Aligoté for the whites. The cellar produces 60% of the wines of the appellation and is the only one to have plots in each municipality of the appellation area.
The selection of plots is spread over all the communes of the appellation. The soils are sometimes stony, sometimes sandy or sandy-loamy.
As soon as they are harvested, the grapes, made from the Aligoté grape variety, are delicately pressed. Vinification and aging take place in thermo-regulated vats. The malolactic fermentation thus ends naturally at the beginning of spring. The wine is then bottled to preserve all its freshness.

The René Bouvier estate is a family house created in 1910 by the grandfather of Bernard Bouvier, current master on board with his wife. The farm covers 13 hectares in pinot noir and 4 in chardonnay for a total of 18 appellations in Burgundy , Côtes-de-Nuits-Villages , Fixin , Marsannay et Gevrey-Chambertin , including Premiers and Grands Crus.
The vineyard is managed in sustainable agriculture and is the subject of a conversion to organic farming, with tillage, disbudding, green harvesting, harvesting and manual sorting. In 2006, the estate inaugurated a new 1 m² vat room, the care taken in vinification and aging making it a sure value in the Burgundy .
When we ask Bernard Bouvier what a good wine is, he replies that "it's a wine that makes you salivate, that makes you want to finish the bottle you have uncorked." Far from marketing, he prefers to evoke the expression of vintages and terroirs, and rejects a certain standardization of wines. Cotes du Rhône Village Rouge Sablet Domaine des Espiers 2022 75cl
It is in 1989 that the area of Espiers was born, in Vacqueyras, when Philippe Cartoux decided to follow in the footsteps of his grandparents who had owned a wine estate in the family since 1879. The nature of the soil is clay-limestone with 15% garrigue-type pebbles. Cultivation is carried out without chemical weedkillers in order to preserve the typicality of the terroirs. The grape varieties are 70% Grenache noir, 20% Mourvèdre and 10% Syrah. Aged 25 years on average, the vines are young and have a significant density of 5400 vines per hectare, or 30% more than traditional plantations in the Southern Rhône. The yield of the vines is 40 hl. Vinification is carried out in concrete vats and the stems are kept during vinification in order to facilitate pumping over and removal.

Delphine is Burgundian and comes from a family of winegrowers. His professional life has always been linked to the great Houses of Burgundy.
Grégory is also from Burgundy. A graduate in oenology, he learned the trade alongside Nadine Gublin, winemaker at the Jacques Prieur estate, and Jean-Pierre de Smet at the Arlot estate. In 2001, he moved to Bordeaux to vinify at Château Smith-Haut-Lafitte, a Grand Cru Classé from Graves. Then it is the meeting with the consultant Stéphane Derenoncourt that he assists until 2004. Then, he becomes technical director of Michel Chapoutier and general manager of Ferraton Père & Fils. Since 2011, he has been technical director of Domaine Laroche in Chablis and has been following Quinta Do Monte d'Oiro in Portugal as a consultant since 2006.
The appellation covers 300 hectares of which around 180 are planted with vines, located a few kilometers from Chablis
