Château Les Justices is an 8,5 hectare property located in Preignac in the heart of Sauternes on a clay-limestone terroir with a rocky subsoil. The vines have an average age of 40 years. The harvest, depending on the whims of the Botrytis Cinerea, is done by successive sorting, and the wine is then vinified in vats.

Château TOUR DES TERMES owes its name to an old tower located on a plot called "les Termes". The origin of this tower dates back to the Gallo-Roman era where the remains of boat moorings dating from this period favor the hypothesis of the presence of an old lighthouse at this location, thus marking the entrance to a front -port of the ancient Gallo-Roman city BRION located a few kilometers away. The name "of the Terms" would mean "the end of the lands". But the Château Tour des Termes is first and foremost the story of an old Médoc family who little by little, over the generations, has created this estate. As early as 1678, old parchments mention a certain ANNEY, a plowman in the town of POTENSAC in the Médoc. In 1876, his great-grandson became a winegrower in Saint-Estèphe then from generation to generation the estate grew until 1938 when Pierre ANNEY acquired the Château Tour des Termes with its old tower and a very beautiful smallholding in SaintCorbian where he settled permanently to produce his wine under the name of Tour des Termes. In 1979, his son Jean and his grandson Christophe perpetuated the family tradition by developing the vineyard and making significant investments in buildings and equipment as well as major plot selection efforts. Today, Château Tour des Termes is one of the best Crus Bourgeois of the appellation.

The name of the wine comes from the origins of the VIOT family, coming from Italy under François 1er, to settle in Tours and to work there the Silk for the Châteaux of the Loire. Silk produced in Asia or in the Cevennes was dyed and woven in Touraine. Silk is a texture, a sensation, an elegance. The Silk and the Wine have in common their natural production, craft of rare products and pleasure. Silky describes the tannins as an elegant and pleasant wine by its delicacy. The charm, the colors, the sensuality accompany Silk and Wine.

The cuvée "La Soie" is a vintage almost exclusively Syrah.Produced in very small quantities. An expressive nose, an opulent liquorice mouth. Tannins present, fine and elegant. It will be enjoyed with a leg of pink, a duck with honey and spices or a capon.

After studying oenology in Bordeaux and Burgundy, then gaining experience working in Côte-Rôtie, in the Rhône, Olivier Pouchoulou decided to return in 2019 to his native land, the Basque Country. Based in Ispoure, he devotes himself to the breeding of his tannats and his cabernet francs, the first vintage of which was produced in 2020. He initially planted 2,5 hectares of vines, then extended his operation by taking into account renting 2 additional hectares on AOC Irouléguy land.

This wine, with the confidential production, contrasts with the received ideas on this grape variety outside its region of origin. To discover ... The Pinot Noir is a variety of northern origin, it is in the heights of the valley of Aude, on the foothills of the Pyrenees that we selected our vineyards. The freshness, the warmer temperatures and the precipitations, allow to avoid a too fast maturity. These vines have an average age of 10 years. They are cut in "Cord of Royat" (trellised) and "Guyot" (trellised). The yield is relatively low. It is in the range of 50 hectoliters per hectare. The soils are clay-limestone on the terraces, close to the original soils of this grape variety.

Through the Chardonnay Les Jamelles, Catherine Delaunay wanted to show all her know-how Burgundy. It obtains a complex and elegant wine, a balance of freshness, fruit, finely wooded aromas and a rich, long and harmonious finish. About 15% of the blend comes from vines located in the foothills of the Cévennes (north of Béziers ), at 400 m altitude. 25% comes from the plain of Hérault and about 35% of the Aude valley, near Carcassonne (Minervois region) where our wines are fermented and aged in oak barrels. The remaining 25% comes from the region of Limoux known for its elegant and complex Chardonnay.Sols of several types: Clay-limestone and basaltic in the Cévennes (giving a nice fresh acidity to the wines), rich clays and pebbles in the plains of Béziers (giving rich and round wines) and clay-limestone near Carcassonne (giving fruity wines).
Vines grown in terraces whose altitude ranges from 150 to 400 meters. Average age of about 15, cut in "cordon de Royat" (trellised) .The average yield is low, of the order of 45 hectoliters per hectare.

The Cabernet Sauvignon Les Jamelles is a wine of character, rich, spicy and complex which combines the characteristics of this great grape variety with interesting terroir notes, while maintaining a certain elegance.This CABERNET-SAUVIGNON comes partly from vineyards located at foot of the mountains of the Cevennes, between Nîmes (terroir, spices) and Béziers (amplitude, roundness and fruit), and also of the Aude valley (structure, power, length).
Hilly vines (average altitude: 150 m), average age of 15 years. Size essentially in "goblet" (not trellised).
Relatively low yield of around 50 hectoliters / hectare. The soils are acidic with pebbles in the valleys, giving the wine a smoky note.

The history of Grand-Puy-Lacoste fascinates in more ways than one. It is part of a family saga that dates back to the XNUMXth century.
The name of Grand-Puy comes from the old expression "puy" which means "mound, small height", and this terroir is already mentioned in documents dating from the Middle Ages. Indeed the vineyard extends over one of the hilltops where the first growths of the Médoc were born. Since the 1920th century, the cru has been passed down from generation to generation and, through alliances between families, it remained within the same descendants until 1978, before resuming a family destiny with the Borie in XNUMX.

The Domaine du Collier was created in 1999 by Antoine Foucault and Caroline Boireau. Extending on the commune of Brézé, the vines of Antoine and Caroline occupy 6 ha approximately. Most of the estate is in Chenin for white wine and the other part in Cabernet Franc for reds.
The work of the vine is carried out in organic, without product of chemical treatment fertilizer or weed-killer, with a work of the grounds and plowing which makes descend the roots of the vine into the rock of tufa.
Harvesting is manual and the winemaking is done in barrels for two to three years in the cellar.Only when the wine has decided that it is bottled and can finally be tasted.
