GIGONDAS HOMINIS FIDES CHATEAU OF SAINT COSME 2017
Very old grenache planted on Miocene limestone sands at a place called "Hominis Fides". Whole harvest. Twelve month aging: 20% in new pieces - 50% in pieces of one wine - 30% in pieces of two and three wines.
The sands of Miocene are, in Gigondas as in the rest of the valley of the Rhone, a geological event posterior to the great uprising of the lace of Montmirail. When the Alps rise, they, like a sheet of paper that we tilt, "open" the Rhone Valley, allowing the sea to engulf itself like a snake finding its way. The sea then covers Lyon, circling the Alpine arc; the Luberon and the Ventoux are only islands, prehistoric fish frolic in the chapel of Saint Cosme and ammonites accumulate in phenomenal quantities. At this time, sands are deposited in our region: we find them in many sites in the Southern Rhone Valley: in the Uchaux massif, Chateauneuf-du-Pape, Gigondas ... Much later, the small ants that we decide to grow vitis vinifera on these sands, and it turns out that the grenache finds there an amazing field of expression. The old Grenache vine in the Miocene sands is the aromatic finesse, the elegant texture, the depth in the mouth. When the wine ages, it takes notes of Morey Saint Denis pinot: peony and small red berries. What a great idea to have planted at the dawn of the twentieth century, 12 years before the Great War, this vineyard that is always with us.

Our Hermitage "Monier de la Sizeranne" comes from an assemblage of different soils, arranged from West to East:
• Bessards: of granite origin, it is the soul of a good Hermitage.
• le Méal: old alluvial terraces rich in gravel and rolled pebbles, more or less calcareous.
• Greffieux: silt soil with a strong presence of pebbles rolled.

The harvest, destemmed with 100%, is vinified in concrete vats. One to two times a day, a pigeage ensures a good extraction. The temperature varies between 30 and 33 ° C.
Breeding
12 at 14 maturing in oak barrels give this wine woody notes, one of the elements of the bouquet.
Several rackings allow a slow and natural clarification.

It is in 1989 that the area of Espiers was born in Vacqueyras, when Philippe Cartoux decided to walk in the footsteps of his grandparents who owned a vineyard in the family since 1879.
The vineyard now covers 9,5 hectares including 3 to Gigondas, 4 en Cotes du Rhone et 2,5 en Côtes-du-Rhône-Villages Sablet. The grape variety is largely dominated by the main 3 Rhone grape varieties, namely Grenache, Syrah and Mourvèdre. The vines are in struggle and receive no chemical treatment. In general, the gestures are all part of a logic of respect for the soil and the environment, with yields particularly lower than 35 hl / ha.
Harvesting is manual for traditional winemaking and aging in oak barrels. Philippe Cartoux likes to produce robust, gourmet but also refined wines. Proof of the quality of its work, Lavinia boutiques offer its wines.
This wine consists of a single plot of vines in the commune of Gigondas.
The vine is aged 40 and composed of 70% Grenache and 30% Syrah. The harvest is manual and often the grapes picked are slightly overripe in order to obtain wines more full-bodied.
The vinification is done with a very high temperature (+ 34 ° c) in order to extract a maximum of aromas and color. The harvest is complete to allow a good homogeneity of the grape marc and long pumping over.
This wine is then aged in barrels for about 12 months, then bottled without sticking or filtration.

On the left bank of the Rhône, at the height of the 45th parallel, unfolds the largest vineyard of the northern appellations, in 11 communes of the Drôme: the Vineyard of Crozes-Hermitage. A prestigious cru, Crozes-Hermitage is available in reds, made from Syrah, and whites from Roussanne and Marsanne.
Acquired by the family in 1490, the property comprises 22 ha of old vines with an average age of 60 years.
They give small yields. The terroir of Saint Cosme is a geological mosaic linked to the great upheaval of the Dentelles de Montmirail. Saint Cosme is located exactly at the crossing point of two geological faults, in a cold and late microclimate: balance, freshness and finesse characterize the wines.

Now unavoidable, the vintage Etoile Noire comes from vines older than 50 years and raised for a year. The Black Star 2018 is a balanced and powerful wine at the same time, offering beautiful aromas of ripe fruit and black cherry. A great success.

The grape variety is not classic since it is 65% Grenache noir and 35% Syrah. The nature of the soil is clay-limestone, and the yield for the traditional vintage is faithful to the decree of the appellation, i.e. 35 hl. The vinification is traditional, without destemming, cold at the beginning, then raised to temperature (35°) and stripped in order to extract maximum fruit. The harvest is carried out manually and the cultivation of the soil is mechanical (without chemical weedkillers) the wines are generally unfiltered. Aging is carried out for 6 months in 225 liter barrels.

Delas, summed up in one sentence: to perpetuate and sublimate the expression of the Terroir.

On a naturally favorable site, 77 plots of vines are scattered within a vast area of 500 hectares on the mountainside.
They form here and there small terraces facing the Sainte-Victoire mountain. The vine has been cultivated there for several centuries.
Patiently, in harmony with nature and the woods that surround him, man walks the paths to cultivate the vine where it gives him the best grapes.
The terroir is that of the new Sainte Victoire appellation, an ecosystem naturally favorable to vines since Roman times. Château Grand Boise is the highest estate there, with vines between 300 and 640 meters.
The combination of altitude with good sunshine makes it possible to obtain wines of great freshness and great balance. No chemical fertilizers or weedkillers are used. The known origins of
La Grand'Boise as a domain dates back to 1610, the date of the oldest property deed found. It was in 1879 that the three estates (Grand'Boise, Cabassude and Les Brunets) united to form one. Traditionally family owned, the estate only changed hands three times in its entire history. Under the impetus of its new owner, a passionate doctor, the estate has very recently been thoroughly renovated. It has equipped itself with efficient and qualitative technical means. The olive-growing activity is revived with 800 olive trees on 3 hectares.
