The Domaine du Couvent presents itself as a family property led by Philippe Chéron and installed in the former convent of Gevrey-Chambertin. This 10 hectare vineyard extends over exceptional terroirs exclusively on the Côte de Nuits. Its vineyard forms a mosaic of plots mainly spread over the communes of Gevrey-Chambertin, Chambolle-Musigny and Vougeot; but also in Vosne-Romanée, Nuits-Saint-Georges and Marsannay la Côte.

Enclosed with an area of ​​1 hectare delimited by its walls, this monopoly is located to the west of the village of Gevrey Chambertin, and to the south of the 1er Cru "Champonnet". Etymologically the Ouches are lands considered to be the most favorable for cultivation. The Domaine du Couvent owns the entire climat. A third of the vines are over 50 years old, the rest were replanted in the 70s.

The René Bouvier estate is a family house created in 1910 by the grandfather of Bernard Bouvier, current master on board with his wife. The farm covers 13 hectares in  pinot noir and 4 in chardonnay for a total of 18 appellations in  BurgundyCôtes-de-Nuits-VillagesFixinMarsannay  et  Gevrey-Chambertin , including Premiers and Grands Crus.

The vineyard is conducted in sustainable agriculture and is converted to organic farming, with tillage, disbudding, harvesting in green, harvest and manual sorting. In 2006, the estate has inaugurated a new winery of 1 200 m², the care given to winemaking and breeding making it a safe bet in the Burgundy.

When you ask Bernard Bouvier what a good wine is, he replies that "it is a wine that makes your mouth water, that makes you want to finish the bottle you have uncorked". Far from marketing, he prefers to evoke the expression of vintages and terroirs, and rejects a certain standardization of wines. The DOMAINE GUYON scea is located in the town of Vosne Romanée.

The estate has been geared towards organic viticulture since the 2000s. To provide transparency in viticulture and winemaking techniques, the estate entered into an Ecocert accreditation process in 2009 and obtained accreditation in 2012 .

The family estate was born before the war, his grandfather and his father successively and wisely led it until his brother and himself took charge of it in the 1990s. The man knows each of his vines, often very old, on the end of his secateurs. Jean pierre guyon took over the operation on his own.

His ambition is to return to what he considers the old way of doing things: that is to say winemaking with most of the whole bunches; no addition of sulfur, if possible, until the spring following harvest.

The Rossignol, originally from Volnay, and the Trapet from Chambolle, have a long history as winegrowers. Most of Domaine Rossignol-Trapet is located in Gevrey-Chambertin, in Côte-d'Or. It is the sons, Nicolas and David Rossignol, who manage the estate. 
The Rossignol-Trapet estate has been certified in organic agriculture by Ecocert and in biodynamic agriculture by Demeter since 2008.

This 10 hectare vineyard extends over exceptional terroirs exclusively on the Côte de Nuits. Its vineyard forms a mosaic of plots mainly spread over the communes of Gevrey-Chambertin, Chambolle-Musigny and Vougeot; but also in Vosne-Romanée, Nuits-Saint-Georges and Marsannay la Côte.


The Domaine du Couvent vineyard in this appellation is symptomatic of the fragmentation of the village: 12 plots, some of which do not exceed one plot, spread over 9 climats for a total of 1ha 80. Two thirds of the vines are over 40 years old, the average yield is from 38 to 40hl/ha. The main plots of the estate are located in the heart of the village in the middle of the hillside: Les Condemennes for 45 ares, Clos de l'Orme for 36 ares, and Chardannes for 25 ares. The rest of the vineyard is spread over the top of the village on the hillside but in an anticline rich in marl (Behind the Four, Echesaux and Creux Baissants for a total of 33 ares) and the bottom of the Piedmont in a soil rich in clay (Mal Carrées, Mombies and Herbues for 38 ares). We vinify and age several cuvées by grouping the terroirs by sector, the assembly only intervening at the end of the ageing. The usual proportion of new barrels is 15 to 20%. This mosaic of terroirs brings to the final blend a typicity very representative of the appellation: intense red berries, elegance, delicacy but also roundness and smoothness.

This 10 hectare vineyard extends over exceptional terroirs exclusively on the Côte de Nuits. Its vineyard forms a mosaic of plots mainly spread over the communes of Gevrey-Chambertin, Chambolle-Musigny and Vougeot; but also in Vosne-Romanée, Nuits-Saint-Georges and Marsannay la Côte.

One of the main vines of the Domaine du Couvent in Chambolle Musigny is located in the Clos de l'Orme climate for 36 ares, which allows vinification by plot of 7 to 8 rooms. Bordering the 1er cru Les Charmes, the vine is established on a gently sloping soil, very draining because composed of a thick layer of limestone scree from the valley of Chambolle. The plot bears very scattered plant material since there are 6 different plantations, the oldest of which were carried out in the 40s, then in 1967,1970, 1972 and 1997. The last plantation dates from XNUMX after the acquisition of the vines by the family. This diversity is one of the keys to the complexity of Clos de l'Orme wine.

With 80 hectares, Domaine Joseph Drouhin is one of the largest in the region.
