Located on the first slopes of the Pyrenean foothills, theSaint Mont appellation extends on 46 common to the west of the department of Gers where it profits from a specific micro-climate, stamped with freshness, and a soil of an extreme richness. The appellation uses local and ancestral grape varieties:Tannat, Pinenc, Cabernet Franc et Cabernet Sauvignon for reds and rosés, Gros Manseng, Arrufiac, and Small Courbu for white wines. The Saint Mont reds, ample and elegant, with notes of black fruits are endowed with a beautiful freshness. Whitesoriginal, fresh and balanced, express aromas of citrus fruit and yellow fruit and a nice minerality. Roseslively, tender and gourmet, exude fragrances of fresh red fruits.

Grenache from the new cuvée les Cayrelières from Chateau La Baronne is a 100% Grenache cuvée with no added sulphur.
The story of the Lignères family is that of doctors who have wine in their veins! The next generation of André, a general practitioner and Suzette, a pharmacist, was assured by their children, Jean, a village doctor like his father in Moux, and his wife Anne, Paul, dentist, and Geneviève, pharmacist-biologist. the Lignères Family's links with the world of wine go back to the 16th century in the villages of Fontcouverte and Moux. Louis Lignères founded the Maison de Vins in 1890 and it was in 1957 that Suzette and André Lignères acquired La Baronne.

Benoît VIOT traveled the world before settling down winemaker just north of Montpellier.
This pharmacy, a pharmacist in the industry, has always been passionate about biology and medicine.
Before going into viticulture, he spent ten years trying to understand the wine, even going so far as to make it in his bathroom in England!
A last visit to Chile has decided to embark on this adventure.
After two years of training, in 2004, he rents 7 hectares of AOC Coteaux du Languedoc Pic Saint Loup and Grés de Montpellier vines in Combaillaux and Saint Gély du Fesc. He buys agricultural and winemaking equipment and creates “the Chemin des Rêves”.
The name of the estate comes from a small path that runs along the vines and which had been nicknamed “Chemin des Rêves” by a resident of the village who came to walk there every day.
In 2008, he buys 7 additional hectares of vines at Saint Gély and a cellar.
In 2009, he builds a sales and tasting cellar.
In 2012, he renovates the winery.
Grapes: Syrah 70%, Grenache 30%
winemaking : traditional with pigeages and soft extractions. Aging: 12 in barrels of 2-3 aged for half of the vintage.

The Clos des Fées estate is located in the commune of Rivesaltes.
The Domaine du Clos des Fées, which today has nearly 30 hectares in the Côtes du Roussillon, Côtes du Roussillon Villages and Vin de Pays des Côtes Catalanes appellations. It is partly composed of steep terraces.
Grapes: 50% Syrah, 30% Grenache, 20% Carignan.

They are the first generation and creators of the current Mas de Daumas Gassac estate. Véronique Guibert de la Vaissiere is an ethnologist, specialist in myths and traditions in Celtic Ireland. Originally from Aveyron, Aimé Guibert comes from an old Millavoise family of glove makers and tanners.
The management of the estate and the vinifications were then passed on to the second generation made up of Samuel, Gaël, Amélien, Roman and Basile. Today they guarantee the values of respect for their "mother nature" and the primacy of the expression of the terroir, the foundations of the estate's wines since its creation.

The harvest is done in boxes, by hand on the whole field. Each parcel is vinified and aged separately until final assembly. The grapes are sorted first in the vineyard, then before and after destemming. The berries are pushed by gravity in the cement tanks, stainless steel and frustoconical wood manufactured by Marc Grenier in Courberon.
For vinification with whole grapes, we tread the grapes in the wooden vats.
Whites and rosés are vinified on whole juices.
The alcoholic fermentation is done with indigenous yeasts of the soil.
No sulfur is added before breeding. Some of our wines are sulphite-free (apart from sulphites produced by native yeasts).
In the heart of the thousand-year-old Gaillacois vineyard, the Cinq Peyres estate is located on the heights of the Cordais plateau, in Cahuzac-sur-Vère. The name of the estate comes from the richness of the terroir and the different limestones that compose it.
From vine to wine, the approach is intended to be virtuous for the environment and for the grapes. Vinification is done without sulfur and takes place spontaneously thanks to the yeasts naturally present on the grapes. Hygiene and tasting are at the heart of the work in the cellar. They attach great importance to the rhythm of nature, to the good health and balance of the soil and to the development of biodiversity.

Vinif Maceration for 1 month in mille-feuilles with pumping over and punching down if necessary. Fermentation in native yeast.
Breeding 2 years in oak barrels over 5 years old, topped up every month. Unfined, unfiltered and sulphur-free.

This estate is located in the town of Peyriac de Mer, south of Narbonne.
21 hectares are spread over 32 different plots, in three different regions of Languedoc-Roussillon.
Very large selection on 5 separate plots on heavy clay-limestone, bordering the ponds near Peyriac-de-Mer and Bages. Mourvèdre 65%, Carignan 30%, Grenache 5%. Fermentation with indigenous yeasts, 40% of which in 500L of new coarse-grained French oak and the rest in stainless steel vats.

The mid-altitude vineyard is located in the northeast of the Pyrénées-Orientales department, on the left bank of the Agly valley near the small village of Baixas.
Soil: limestone - schists. Carignan: 10% Grenache Noir and Mourvèdre: 20% Syrah: 70%. The harvest is destemmed and crushed. Traditional 8-day maceration with daily pumping over for Grenache noir and Syrah.
The Carignan was vinified in carbonic maceration.
