The AOC Rivesaltes defines a natural sweet wine (VDN). It is produced near the town of Rivesaltes, over a large part of the Pyrénées Orientales. The appellation covers 5200 hectares and produces approximately 127 hectoliters per year. The climate is like in all of Roussillon, of the Mediterranean type. The territory of this AOC is crossed by three rivers, the Agly, the Têt and the Tech, which have drawn a relief composed of stepped terraces and hills, with various types of soil: pebbles, granite, clays and silts as well as shales.
All the wines of this AOC must undergo mutage, a process initiated by Arnau de Vilanova (Arnaud de Villeneuve) in the 96th century which consists of stopping the alcoholic fermentation of the must by adding wine alcohol at a minimum of XNUMX°. This traditional operation, which characterizes Vins Doux Naturels (VDN), makes it possible to better preserve the sugars and enhance the natural aromas specific to the grape varieties used. The Rivesaltes are produced with four main grape varieties: Grenache Blanc, Grenache Gris, Grenache Noir, Maccabeu, and two accessory grape varieties which are Muscat Blanc à Petits Grains and Muscat d'Alexandrie.
The name of the Rivesaltes appellation wines may be supplemented by the words "amber" (aging in an oxidative medium for a minimum of two years), "garnet" (minimum 75% Grenache noir and storage in a reducing medium for a minimum of 12 months, including 3 in bottles), “tuilé” (ageing in contact with air for a minimum of two years) and “out of age” (for amber and tuilé Rivesaltes aged for a minimum of 5 years). White Rivesaltes are amber in color as they age with an aroma of vanilla, cooked cherry or honey. Red Rivesaltes are more potent and can be kept much longer.

The vineyard of Banyuls vintage is located in the extreme south of France at the meeting point between Pyrenees and Mediterranean.
