CRYSTAL CHAMPAGNE ROEDERER 2014
The most famous of the Roederer wines was born in 1876 to satisfy the demanding taste of Tsar Alexander II. The emperor asks Louis Roederer to reserve for him each year the best cuvée of the House, which he particularly appreciates. To accentuate its uniqueness, this exceptional champagne will be packaged in a flat-bottom crystal bottle. It will therefore bear the name of this precious material, exalting its transparency and its light. Elaborated only during the "great years", when the maturity of the Chardonnay (40%) and Pinot Noir (60%) which compose it is perfect, Cristal ages six years in the cellar and rests eight months after disgorging.
CHAMPAGNE DOM RUINART BLANC DE BLANCS 2009
Founded in 1729, Ruinart is the oldest champagne house. Before her, there were none. At its source, the intuition of a monk who was ahead of his time.
Dom Ruinart cuvées are made exclusively from grand cru grapes, mainly Chardonnay from the Côte des Blancs and the Montagne de Reims. Vintage, they crown the best harvests. It is in the heart of the chalk pits of the Ruinart house that these prestigious bottles develop slowly, on average ten years, and gain all their aromatic complexity.

In 1955, Bernard de Nonancourt has the idea to create a great vintage by freeing himself from the Champagne conventions of the time that wanted a vintage of prestige is obligatorily vintage, ie from a single vintage year .
For him, the great vintage Laurent-Perrier had to have a unique style highlighting the art of assembly pushed to a pinnacle: "The best of the best with the best" as he liked to say. Cuvée Champenoise par excellence, Grand Siècle by Laurent-Perrier is the blend of wines of 3 great years vintage by Laurent-Perrier, from the best crus and the best grape varieties. CHAMPAGNE CRYSTAL ROEDERER PINK 2007 75CL
In 1974, one hundred years after the creation of Cristal, Jean-Claude Rouzaud created the Cristal Rosé cuvée by selecting old Pinot noir vines, located on the best terroirs of the Grand Cru d'Aÿ, today cultivated biodynamically. Drawing an exquisite minerality from the unique limestone soil of this terroir, these grapes have the particularity of reaching, in great years, extraordinary maturity associated with crystalline acidity.
Made from around 55% Pinot noir and 45% Chardonnay, including 20% wines vinified in oak casks, Cristal Rosé comes from the bleeding method after cold maceration. It benefits on average from 6 years of maturation in cellars.

Maison BILLECART-SALMON has decided to return to ancestral Champagne methods with the draft horse which has been showing up again for a few years in the Clos Saint-Hilaire.This method of soil maintenance of the vine improves its porosity and its biodiversity: the roots develop in depth and the minerals extracted from the soil favor the growth of smaller and concentrated grapes to reveal the typical taste of this terroir.
A living and pampered soil assures us of best expression of this unique terroir.

"In the 50 years, his grandmother dedicated to leisure this green space, adorned with some vineyards, flowers and fruit trees, adjoining his house in Mareuil-sur-Aÿ.
Discovering the potential of this exceptional terroir, the family planted the first Pinot Noir vines in 1964.
The family tries out the white vinification of this Pinot Noir in small Burgundy barrels: an exceptional champagne is about to be born.
After a few years of meticulous maintenance of the vines, the harvest of the year 1995 is remarkable: it will be the vintage 1er of this unique cuvée of its kind. In honor of the patron saint of the church of Mareuil-sur-Aÿ, it is called Clos Saint-Hilaire.
Now each bottle is numbered and each vintage has no more 3500 than 7000 bottles. "
