Chenin Blanc grape variety

Nestled in Touraine, between the banks of the Cher and the Loire, on clay-limestone soils, is the estate. In the heart of the Châteaux de la Loire region, in the town of Saint-Martin-Le-Beau, there is a 17-hectare wine estate.

The estate's wines benefit from special aging in troglodyte cellars carved from local stone, tuffeau. This structure offers a constant temperature between 13° and 14°, ideal for aging wines and promoting the thermal self-regulation of the barrels during alcoholic fermentation. Each plot of grapes is pressed and vinified separately, allowing a unique expression of each terroir. The wines are then aged in Allier oak barrels or in stainless steel vats, for a period varying from 6 to 24 months depending on the vintages, in order to achieve their full expression and optimal balance.

Louis-Benjamin Dagueneau, who has worked for several years alongside his father and his sister Charlotte (commercial side) have been in charge of the estate since Didier's death in September 2008. Louis Benjamin perpetuates the high-end artisanal spirit of this small property where the management of the vineyard is done with control and serenity. Here, the harvest in crates is done in a very short time, at optimal maturity, with a great deal of staff.The use of selected yeasts, tight settling and long aging on lies without support remain the basis of an absolute quest for the crystalline expression of Sauvignon – enhanced by precise aging in wood, in barrels larger than the barrels, “cigarettes” (320 liters) or “tons” (600 liters). 

Seven cuvées make up the range: Blanc Fumé de Pouilly (formerly Chailloux), a blend of four plots; Pur Sang, a blend from the La Folie sector; Buisson Renard, a parcel of Saint-Andelain, more compact; Flint, crystalline purity of flint clays; Not to mention the extremely rare Clos du Calvaire: 20 ares planted at 14000 vines/ha, uprooted in 2009 (2008 being the last vintage) and replanted in another direction at 10 vines/ha (next vintage around 000), and the Asteroid – number of a vineyard with vines harvested still very ripe. Created in the year 1880, the vineyard covered a surface of one hectare and a half during the installation of Victor LEBRETON, died at the age of 97 years in January 97. He was taken over by his son Victor (66 years, now retired) who has teamed up in 1988 with his two children, Victor (37) and Vincent (35).

The harvest was carried out by 5 successive sorts, the last ending at the end of November. “Les Trois Schistes” is the fruit of several sorts harvested on the three terroirs of Domaine de Montgilet. The botrytised harvest had an alcoholic potential of 17% volume on the strain. These bunches or parts of bunches were harvested in 30 kg crates to avoid any crushing and were subjected to slow and long pressing in the vertical press. All this without re-digging, in an attempt to extract the maximum structure from the grape while preserving “finesse and elegance”. This cuvée has fermented and been aged in barrels.

It is in this spirit that we took over the vineyard in 2010 and that we work daily to produce high quality local wines.

The vines are grown on the clay-siliceous soils of Chenonceaux with the greatest respect for our environment. The vines, aged 15 to 105 years, have deliberately limited yields to obtain grapes of optimum quality.

Pierre-André Frot, agricultural engineer and oenologist, is a lover of the vine and its environment. Passionate about his profession, Pierre strives to transmit this passion through the wines he produces.

Passed by great houses of Bordeaux and Burgundy during his studies, he transcribes the rigor and finesse taught in his wines. Coming from a family of entrepreneurs, Pierre very quickly acquired the Les Pierres d'Aurèle estate after working as a banker for the first 3 years following his studies.

Today, alongside his wife, he leads the life he has always dreamed of between passing on his love of wine and sharing the good things in life.

Saint Martin Tower. It was in 1988 that Betrand MONCHIN embarked on the wine adventure in Menetou Salon, where his grandfather was already producing wine before the war. The plots, well established on the heights of the village of Morogues, consist of 10 hectares of Sauvignon and 7 hectares of Pinot. For almost 30 years now, Bertrand MINCHIN has been making the most of this magnificent Kimmeridgian terroir. Everything is done in the vines to produce the finest grapes: plowing, composts, control of vegetative balance, control of yields and respect for the 'environment (area labeled High Environmental Value).

A large part of the vineyard is harvested manually, to vinify each plot separately. It is in a perfectly equipped cellar (sorting table, carpets, thermoregulated vats, wooden vats, pneumatic presses, etc.) that he vinifies his grapes in a little interventionist way. The original Domaine was created by his great-grandparents, Maria Juby and Louis Juby, both from Angevin, who after inheriting vines on the slopes of Les Bruandières in St Aubin de Luigné at the beginning of the 1920th century, arrived in Ardenay, ("wooded height", in Gaulish) a small hamlet on the slopes on the right bank of the Layon, in Chaudefonds sur Layon, to settle there as winegrowers around XNUMX.

After a stint in Paris and other professional activities, Patrick BEAUDOUIN returned to Anjou in 1990 to re-found an estate based on the small and old family winery, the few rented vines still in production, and beautiful uncultivated hillsides.

Today, Domaine Patrick Baudouin has thirteen and a half hectares of vines in production. Ten hectares of Chenin, three and a half of Cabernet Franc and Sauvignon, in the communes of Chaudefonds sur Layon, Saint Aubin de Luigné and Rochefort sur Loire (Quart de Chaume). Patrick also planted one hectare of Savennières in 2009.

The Estate undertook to convert all its vines to organic farming in 2002. Any new plot rented or purchased is immediately converted, if it is not already organic.
Since 1997 they resumed tillage, then abandoned chemical weedkillers, and from 2001 they no longer used synthetic treatment products. In the cellar, since 1994, no more wine from the Domaine has been chaptalized ("sweetened", as the ancients said), by limiting sulfur to a minimum.

In the vineyard, certified organic farming, constant search for the best human labor / biotope ratio, for a non-destructive, sustainable culture.
