The honey of Hédène rosemary is harvested in France (within the Natural Park of Narbonnaise) in the spring. It has a slightly vegetal scent and a very pleasant flavor. With a creamy texture, with a very slight grain crystallized in the mouth, it is distinguished by its very light color and harmonious taste. More floral than Hédène acacia honey, it remains sweet on the palate with vegetal notes, fresh and slightly acidic.
Flowering begins in December and continues until the end of April. The harvest is done in May.
