The sweetness of rosemary honey is reminiscent of subtle and delicate acacia honey. The honey of France Hédène rosemary is distinguished by perfectly balanced vegetable notes. It can be enjoyed raw with a spoon or spread on toast of hot bread, just like for heather honey, whose texture is reminiscent of jelly jam. 

The honey of Hédène rosemary is harvested in France (within the Natural Park of Narbonnaise) in the spring. It has a slightly vegetal scent and a very pleasant flavor. With a creamy texture, with a very slight grain crystallized in the mouth, it is distinguished by its very light color and harmonious taste. More floral than Hédène acacia honey, it remains sweet on the palate with vegetal notes, fresh and slightly acidic.

Flowering begins in December and continues until the end of April. The harvest is done in May.

TASTING TIPS - BREAKFAST IN SOFTNESS
France Hédène rosemary honey can be used at breakfast, on a hot brioche or on toast. Thanks to its creamy texture, it spreads and melts delicately on crusty bread. Harvested in France, in the Cévennes National Park, Hédène chestnut honey surprises with its intensity. With its woody taste and copper-brown highlights, it will delight gourmets in search of a raw product and character. Of liquid texture, it surprises by its aromatic power and it has a very slight bitterness at the end of the mouth. Its woody and warm flavors evoke grilled caramel. It is a full-bodied, strong and persistent honey, long in the mouth with a very subtle bitterness.

Chestnut trees bloom from mid-June to the end of August and the harvest takes place from early August to mid-September.
