Now unavoidable, the vintage Etoile Noire comes from vines older than 50 years and raised for a year. The Black Star 2018 is a balanced and powerful wine at the same time, offering beautiful aromas of ripe fruit and black cherry. A great success.

The vineyard is planted on 3 very different types of soil:

  • Chassis : represents 80% of the parcels with a clay-limestone soil with many pebbles from the Rhône. the typicality of Crozes-Hermitage.
  • Larnage : is characterized by Loess, white varieties (Marsanne and Roussanne) coexist with Syrah to give white and red wines fond of and fruity.
  • The castle of Larnage : a white earth composed of Kaolin, characteristic of this village, foreshadows a bright future for our plot of Roussanne planted in 2011

The AOC Rivesaltes defines a natural sweet wine (VDN). It is produced near the town of Rivesaltes, over a large part of the Pyrénées Orientales. The appellation covers 5200 hectares and produces approximately 127 hectoliters per year. The climate is like in all of Roussillon, of the Mediterranean type. The territory of this AOC is crossed by three rivers, the Agly, the Têt and the Tech, which have drawn a relief composed of stepped terraces and hills, with various types of soil: pebbles, granite, clays and silts as well as shales.

All the wines of this AOC must undergo mutage, a process initiated by Arnau de Vilanova (Arnaud de Villeneuve) in the 96th century which consists of stopping the alcoholic fermentation of the must by adding wine alcohol at a minimum of XNUMX°. This traditional operation, which characterizes Vins Doux Naturels (VDN), makes it possible to better preserve the sugars and enhance the natural aromas specific to the grape varieties used. The Rivesaltes are produced with four main grape varieties: Grenache Blanc, Grenache Gris, Grenache Noir, Maccabeu, and two accessory grape varieties which are Muscat Blanc à Petits Grains and Muscat d'Alexandrie.

The name of the Rivesaltes appellation wines may be supplemented by the words "amber" (aging in an oxidative medium for a minimum of two years), "garnet" (minimum 75% Grenache noir and storage in a reducing medium for a minimum of 12 months, including 3 in bottles), “tuilé” (ageing in contact with air for a minimum of two years) and “out of age” (for amber and tuilé Rivesaltes aged for a minimum of 5 years). White Rivesaltes are amber in color as they age with an aroma of vanilla, cooked cherry or honey. Red Rivesaltes are more potent and can be kept much longer.

100% Viognier. Granitic arenas. Eight months old. Breeding 40% in pieces of a wine - 30% in pieces of two wines - 40% in pieces of three wines. Condrieu leaves no amateur indifferent. We like or we do not like Condrieu. There is no half-measure, it's a fact. But it is a paradox that I have trouble understanding. Condrieu is criticized for being a wine difficult to marry with food. The good deal: it is precisely because it is difficult to marry that it is a great wine of gastronomy. Its strong identity opens fertile paths in the gastronmie but it does not support the approximation. From this point of view, I would like to compare it to the yellow wine of the Jura, which is the wine of gastronomy par excellence but which is "marriageable" with few products. However, just be a little daring: forget the sugar on a poached foie gras and replace it by the maturity of Condrieu. Or try the Condrieu on a Stilton, the pinnacle remaining the Condrieu with the bouillabaisse: certainly a dish that is not cooked every day but everything deserves. Our 2017 comes with its usual depth and nice bitters that contribute to the freshness of the wine. Salinity is still there, deploying the granitic mineral of our soils. The "white wine" version of Cote Rotie is, like its alter ego, a great wine of maturity. There are no great wines without ripe grapes: this simply does not exist. Fennel, licorice, elderberry, old rose, anise.

Grape variety: 100% Clairette

It is in 1989 that the area of ​​Espiers was born in Vacqueyras, when Philippe Cartoux decided to walk in the footsteps of his grandparents who owned a vineyard in the family since 1879.

The vineyard now covers 9,5 hectares including 3 to Gigondas, 4 en Cotes du Rhone et 2,5 en Côtes-du-Rhône-Villages Sablet. The grape variety is largely dominated by the main 3 Rhone grape varieties, namely Grenache, Syrah and Mourvèdre. The vines are in struggle and receive no chemical treatment. In general, the gestures are all part of a logic of respect for the soil and the environment, with yields particularly lower than 35 hl / ha.

Harvesting is manual for traditional winemaking and aging in oak barrels. Philippe Cartoux likes to produce robust, gourmet but also refined wines.

Through evaporation, the level drops in the barrel and a veil of yeast forms on the surface of the wine which protects it from direct oxidation and gives it very specific aromas.


Chantal and Jean Berthet-Bondet moved to Château-Chalon in 1984 and the first harvests took place in 1985.
Hélène, the eldest daughter, converted to viticulture from 2013 with the help of her father, who handed over to her in 2018 when she became manager of the estate.

After aging for three years in barrels, the wine obtains its structure and is based on a balance between 14 to 15% alcohol and 90 to 100 grams of residual sugar per liter. Nicolas Rossignol was born in 1974 and represents the 5 generation of vine growers on the terroirs of Volnay. After a technical training acquired at the Viticultural High School of Beaune between 1989 and 1994, he put into practice his knowledge acquired during various internships like the Domaine JOSEPH VOILLOT in Volnay or the Domaine du VIEUX TELEGRAPHE in Chateauneuf du Pape, and began vinification on the family estate ROSSIGNOL JEANNIARD.

Anxious to master other techniques of cultivation and breeding, he went to win in South Africa Domaine BOSCHENDAL in 1995 and Bordeaux in Château LA CARDONNE governed by Château LAFITE ROTHSCHILD. It was not long before he created his own estate in 1997 with a surface of 3 Hectares distributed in the communes of VOLNAY, POMMARD, BEAUNE, ALOXE CORTON and PERNAND VERGELESSES, while continuing the vinification and marketing of the wines of Domaine Familial ROSSIGNOL JEANNIARD

In 1998, it is 1Ha 50 extra with applellations like Pommard 1er vintage Jarolières and Chanlins Volnay 1er vintage Fremiets and Santenots that come to enlarge the field. From 2005 a new town is entering the range Savigny-les-Beaune with a village and two 1er raw whose Savigny 1er Cru Lavières et Fourneaux and a Beaune 1er Cru Clos du Roy.
It was also at this time that the decision was made to create a business to unify the two domains at the commercial level, this is how all the wines are now marketed under the label NICOLAS ROSSIGNOL

The Domain NICOLAS ROSSIGNOL currently operates 6 ha 25 which gives a total area of ​​exploitation areas of nearly 16 ha.

Reserve of the Grand Prior

In the XNUMXth century, the Abbey of Savigny used to collect a tithe in kind from its farmers. As a fine connoisseur, Benoît Maillard, one of the most famous priors of the Abbey thanks to his work as a historian and whose writings have allowed us to better understand the life of the abbey at that time, "reserved" the best cuvées for the consumption of the Abbot and his distinguished guests.
The selected plots are placed in the commune of Savigny where the enclosure of the abbey stood, of which only a fortified tower remains today. The terroir of Savigny offers sandy crystalline soils covering in places basalt rocks.
The raisins, from the Gamay grape variety, are defined when ripe. The harvest is then partially destemmed and benefits from a long vatting period of 8 to 10 days. After pressing part of the cuvée continues its fermentation and aging in oak barrels (barrels of 2 to 3 wines). A more fruity base is also kept in vats.
The aging lasts 7 to 8 months in vats and oak barrels in order to obtain a round wine offering a subtle alliance between notes of stone fruits and silky tannins. After bottling, the Réserve du Grand Prieur allows itself a rest of at least 30 days before being marketed.
It can be kept while improving for 3 to 5 years.

Born from ancient lands, the vineyard of the Cave des Coteaux du Lyonnais extends over 230 Ha of vines planted with Gamay, for the reds and rosés, and with Chardonnay and Aligoté for the whites. The cellar produces 60% of the wines of the appellation and is the only one to have plots in each municipality of the appellation area.

The selection of plots is spread over all the communes of the appellation. The soils are sometimes stony, sometimes sandy or sandy-loamy.

As soon as they are harvested, the grapes, made from the Aligoté grape variety, are delicately pressed. Vinification and aging take place in thermo-regulated vats. The malolactic fermentation thus ends naturally at the beginning of spring. The wine is then bottled to preserve all its freshness.

The René Bouvier estate is a family house created in 1910 by the grandfather of Bernard Bouvier, current master on board with his wife. The farm covers 13 hectares in pinot noir and 4 in chardonnay for a total of 18 appellations in Burgundy , Côtes-de-Nuits-Villages , Fixin , Marsannay et Gevrey-Chambertin , including Premiers and Grands Crus.

The vineyard is managed in sustainable agriculture and is the subject of a conversion to organic farming, with tillage, disbudding, green harvesting, harvesting and manual sorting. In 2006, the estate inaugurated a new 1 m² vat room, the care taken in vinification and aging making it a sure value in the Burgundy .

When we ask Bernard Bouvier what a good wine is, he replies that "it's a wine that makes you salivate, that makes you want to finish the bottle you have uncorked." Far from marketing, he prefers to evoke the expression of vintages and terroirs, and rejects a certain standardization of wines. This search for quality associated with respect for the terroir defines the Bouvier touch: round and powerful wines with perfectly tamed tannins.

Never devoid of risk-taking, this search for the skin reveals the quintessence of the varied terroir of Calce, composed in particular of astonishing black marl on which are planted the syrahs of the Muntada. By relentless work on the soil and the vine, the phenolic maturities arrive more quickly, allowing very moderate alcoholic degrees. These white and red wines require at least three or four years of bottle before opening wisely, but ten to fifteen years do not scare the big cuvées - and all show up at best after a long passage in carafe. We pay tribute to the exemplary journey of a family that has opened new avenues and reinvented the viticulture of the South.
